Chocolate Coconut Cupcakes (Vegan & Gluten Free)

I made them & the whole family approved — delish! (We didn’t have ground flax, so I just used chia seeds & didn’t grind them but surprisingly it worked)

For the cupcakes:
2 tablespoons ground flax seeds
1/3 cup warm water
1 cup almond milk
1 tablespoon apple cider vinegar
1 1/4 cups gluten-free flour mix
3/4 cups granulated sugar
1/2 cup cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/3 cup coconut oil, liquified and at room temperature
1 teaspoon almond extract

For the icing:
3/4 cup coconut oil, liquified and at room temperature
1/2 teaspoon almond extract
3 cups powdered sugar, sifted
2 tablespoons almond milk
1/2 cup unsweetened flaked coconut, toasted
